Con la práctica, este proceso te ayudará a conseguir bordes bien filosos y laterales extremadamente parejos. cuando empece a ahondar en esta técnica probé muchísimos mecanismos de trabajo, fui atesorando lo que me servia y descartando aquello que no me resultaba hasta lograr así, un método propio de sellado enfocado primordialmente en rescatar el sabor sin resignar la estética. En argentina, una gran parte del país tiene afán por los pasteles muy húmedos, de miga muy suave y con mucho relleno. Esta preferencia bien marcada por el cliente dificulta bastante la tarea de lograr acabados impecables en los trabajos ya que los pasteles se suelen abombar, pueden filtrar almíbar y perder por completo su forma cuando trabajamos bajo estas condiciones. El sellado en capas esta directamente orientado a este tipo de pasteles ya que propiciara una pared de contención que permitirá levantar pasteles doble altura sin escatimar en la humedad ni en la cantidad de relleno.
